On vous emm\u00e8ne ! **<\/p>\n<p>La <em>caldeirada de peixe<\/em>, c&rsquo;est la bouillabaisse portugaise, le rago\u00fbt du p\u00eacheur, un plat traditionnel des villages et des villes de bord de mer.<\/p>\n<p>Pour sa pr\u00e9paration, on utilise une gamme vari\u00e9e de poissons, notamment le congre, la roussette, la raie, torpille, sardine, etc. Certains prennent aussi quelques sortes de coquillages, les t\u00e9lines, des coques ou des palourdes. L&rsquo;un d&rsquo;eux se nommait la <strong>caldeirada de peixe<\/strong> &#8211; ou rago\u00fbt du p\u00eacheur, sorte <span class=\"right blockMore img\"><a href=\"http:\/\/www.carnets-de-traverse.com\/boutique\/livres\/7-voyage-portugal.html\" class=\"broken_link\"><img decoding=\"async\" src=\"\/blog\/wp-content\/uploads\/2012\/02\/portugal-pi.jpg\" alt=\"Carnet de voyage au Portugal\" \/><\/a><\/span> de bouillabaisse. On cuisait ce repas pr\u00e9s de la rivi\u00e8re au retour des hommes de la p\u00eache.<\/p>\n<p>Pour pr\u00e9parer ce rago\u00fbt surprenant, les femmes disposaient le poisson en alternance avec des pommes de terre, des oignons et des tomates et le laissaient cuire doucement sur un feu de bois en plein air. La fra\u00eecheur de tous les ingr\u00e9dients donnait \u00e0 ce plat une saveur extraordinaire.<\/p><\/blockquote>\n<p><strong>Ingr\u00e9dients (6-8 personnes)<\/strong><\/p>\n<p>1,8 kg de poissons (sardine, congre, roussette, raie, torpille, dorade, maquereau, baudroie&#8230;), 150 g de coques, 250 g de crevettes, 500 g de calamars, 300 g de tomates m\u00fbres, 1 kg d&rsquo;oignons, 400 g de pulpe de tomate, 4 poivrons (verts et rouges), 2 t\u00eates d&rsquo;ail, 2 kg de pommes de terre, 1 bouquet de persil (ou coriandre), 3 feuilles de laurier, 1\/2 l d&rsquo;huile d&rsquo;olive, vin blanc, paprika, piment, sel et poivre blanc.<\/p>\n<p><strong>Pr\u00e9paration 30 min \/ Cuisson 45 min<\/strong><\/p>\n<p>Pr\u00e9parez les poissons et coupez-les en gros morceaux, sauf les sardines qui restent enti\u00e8res.<\/p>\n<p><span class=\"left blockMore\">Pour \u00e9viter que \u00e7a accroche, on peut \u00e9taler 300g de palourdes ou de moules au fond de la cocotte.<\/span>Dans une grande cocotte, disposer les rondelles d\u2019oignon, de tomate, pommes de terre, l\u2019ail, les tranches de poisson et les poivrons en couches altern\u00e9es.<\/p>\n<p>Arrosez avec la pulpe de tomate, l&rsquo;huile d&rsquo;olive et le vin blanc jusqu&rsquo;\u00e0 couvrir bien tous les ingr\u00e9dients. Assaisonner avec du sel, du poivre, le paprika, le piment, les feuilles de laurier et quelques brins de coriandre ou persil. Faites cuire \u00e0 feu doux 45 min. Servir bien chaud.<\/p>\n<p>Nous en avons mang\u00e9 dans un petit port au nord de Lisbonne, \u00e0 Costa Nova (r\u00e9gion d&rsquo;Aveiro).
